Energy Crunch Salad

Salads have been a favourite of mine for as long as I can remember. My grandmother being an immigrant from Europe was passionate about her abundant backyard garden, always full of leafy greens, and vegetables of every variety. She would give that garden love and attention, yielding only the freshest most beautiful produce. It was those times when she would take those fresh greens, wash them well and create salads that I craved.

Over the years I learned the secret, that you had to make things with love, use your hands and put your heart into whatever you make. Those garden salads were the start of my culinary days, and I am grateful. Salads are a great way to incorporate a plethora of flavour with wholesome, energy boosting ingredients, that can be kept simple or made more complex.

The simplicity of this salad, gives crunch from the fresh cucumber to the sweet pomegranate, along with the sprouts and hemp seeds which will provide protein to give the energy fuel needed. The pomegranate seeds and sprouts will provide powerful antioxidants that everyone can benefit from. Every bite bursting with flavours enhanced by the parsley and lemon, make you feel like you are in the Mediterranean on a sunny day, providing valuable vitamin C especially during the winter months. It is time to get energized and remember when this salad is made, put heart into it and share the love with others.

Recipe Serves: 2   Time: 20 minutes


1 cup chopped cucumber

1 cup mixed sprouts (can use any type chickpea, mung beans, or sunflower)

1/2 cup pomegranate seeds

1/4 cup chopped flat leaf parsley

2 Tbsp raw sunflower seeds

2 Tbsp hemp seeds

Dressing: 1/4 cup fresh squeezed lemon juice

1 Tbsp tahini

1 tsp honey

1 Tbsp olive oil

salt to taste


Toss all the salad ingredients in a medium bowl In a small bowl whisk together the dressing ingredients Transfer the salad to a serving bowl and drizzle the dressing over top Serve and enjoy
